Peach Cobbler

2 to 2 1/2 cups sugar
1/3 cup cornstarch
8 cups sliced fresh peaches
1/2 teaspoon almond extract
1/4 cup melted butter
Pastry

Combine sugar and cornstarch. Toss with peaches. Add extract and
butter; set aside.

2 cups all-purpose flour
2 tablespoons sugar
pinch of salt
1/3 cup solid all-vegetable shortening
4 tablespoons ice water
1/3 cup melted butter
1/2 cup sugar

Combine flour, sugar and salt in a mixing bowl. Cut shortening
into flour until it is the consistency of cornmeal. Gradually add
ice water until dough holds its shape. Roll out on floured board;
cut into strips.

Pour peach filling into a buttered 13 x 9 x 2 inch baking dish.
Criss- cross dough strips over filling. Brush pastry with remaining
melted butter; sprinkle with sugar. Bake in a 400F degree oven 30
minutes or until crust is browned.
